Gnudi Pumpkin

Gnudi Pumpkin is a delightful pasta dish that combines the earthy sweetness of pumpkin with the creamy richness of ricotta cheese. These delicate dumplings are flavored with nutmeg and Parmesan, creating a cozy autumn-inspired meal.

Ingredients:

  • 400g pumpkin puree

  • 200g ricotta cheese

  • 1 egg

  • 50g grated Parmesan cheese

  • 1/4 tsp nutmeg

  • Salt and pepper to taste

  • 200g all-purpose flour

  • Semolina flour for dusting

  • Butter for serving

  • Fresh sage leaves for garnish

Instructions:

In a large bowl, combine pumpkin puree, ricotta cheese, egg, Parmesan cheese, nutmeg, salt, and pepper


Gradually add all-purpose flour to the mixture and knead until a smooth dough forms


Divide the dough into small portions and roll each portion into a ball


Roll each ball in semolina flour to coat lightly, then gently press down to form small discs


Bring a large pot of salted water to a gentle simmer


Carefully drop the gnudi into the simmering water and cook until they float to the surface, about 2-3 minutes


Remove the gnudi with a slotted spoon and transfer to a serving plate


Serve the gnudi pumpkin hot, drizzled with melted butter and garnished with fresh sage leaves

Ingredients:

  • 1 lb ground beef

  • 6 slices bacon, cooked and crumbled

  • 4 cups mixed greens

  • 1/2 red onion, thinly sliced

  • 1 tomato, diced

  • 1 avocado, diced

  • 1/4 cup paleo mayonnaise

  • 1 tablespoon coconut milk

  • 1 teaspoon apple cider vinegar

  • 1 teaspoon dried dill

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon onion powder

  • Salt and pepper to taste

Instructions:

In a large skillet, cook the ground beef over medium heat until browned and cooked through


Season with salt and pepper to taste


In a small bowl, whisk together the paleo mayonnaise, coconut milk, apple cider vinegar, dried dill, garlic powder, and onion powder to make the ranch dressing


Season with salt and pepper to taste

Air Fryer Smashed Potatoes

Air fryer smashed potatoes are easy and a cheap side dish that's crispy on the outside and creamy on the inside.

Ingredients:

  • 6 medium-sized potatoes

  • 2 tablespoons olive oil

  • Salt and pepper to taste

  • Optional: garlic powder, paprika, or herbs for seasoning

Instructions:

Get the air fryer ready by heating it up to 400F 200C


Scrub the potatoes really well, and then use a towel to dry them off


Arrange the potatoes so that they are all in the same place in the air fryer basket


If you poke a potato with a fork, it should be soft after about 25 minutes in the air fryer


Take the potatoes out of the air fryer and give them a minute or two to cool down


Squish each potato gently on a flat surface, like the bottom of a glass or a spatula, until it's flattened but still whole


Add salt, pepper, and any other spices you like to the mashed potatoes after brushing them with olive oil


The potatoes should be cooked for another 10 to 15 minutes, or until they are crispy and golden brown


This is a cheap and tasty side dish that you can serve hot

This simple recipe will help you make a tasty Margherita pizza at home. Fresh basil, mozzarella, and tomato sauce are a classic combination that everyone loves!

Ingredients:

  • 1 pizza dough ball

  • 1/2 cup pizza sauce

  • 1 1/2 cups shredded mozzarella cheese

  • 8-10 fresh basil leaves

  • 2 cloves garlic, minced

  • 1 tablespoon olive oil

  • Salt and pepper to taste

Instructions:

Preheat your oven to 475F 245C


Roll out the pizza dough on a floured surface to your desired thickness


Transfer the rolled dough to a pizza stone or baking sheet lined with parchment paper


Spread the pizza sauce evenly over the dough, leaving a small border around the edges for the crust


Sprinkle the shredded mozzarella cheese evenly over the sauce

Ingredients:

  • 4 chicken breasts

  • 1/2 cup soy sauce

  • 1 tablespoon sesame oil

Instructions:

Add chicken breasts to a ziplock bag or shallow dish, pour half of the teriyaki sauce over them, and marinate for at least 30 minutes, or overnight for best results


Preheat grill or grill pan over medium-high heat


Remove chicken from marinade and discard excess marinade


Grill chicken for 6-7 minutes on each side, or until cooked through and juices run clear


In a small bowl, mix cornstarch and water until smooth


In a saucepan, heat the remaining teriyaki sauce over medium heat


Once simmering, stir in the cornstarch mixture and cook until sauce thickens, about 2 minutes


Brush thickened teriyaki sauce over grilled chicken


Garnish with sesame seeds and chopped green onions


Serve hot with rice or vegetables

Garlic Cheese Fries

You can share these garlic cheese fries with family and friends because they are tasty and crispy. This dish is hard to resist because it has garlic, cheese, and perfectly cooked fries.

Ingredients:

  • 4 large potatoes, washed and cut into fries

  • 2 tablespoons olive oil

  • 4 cloves garlic, minced

  • 1 cup shredded cheddar cheese

After taking the fries out of the oven, cover them with shredded cheddar cheese

Instructions:

Pour the hot white chocolate into mugs when it's ready


If you want, you can decorate it with whipped cream and white chocolate shavings

Spicy Scrambled Eggs
